I love to smell cheese, eat cheese, act cheesy...you name it. Imagine my delight when Scardello Cheese shop finally had an opening in their "Best of Big D" award winning Cheese 101 class. My friend Alyssa and I were greeted with a glass of Riesling, a table full of strangers and a slate board loaded with about 18 different cheeses with all the accoutrements. Perfect girls night out.
Cheesemonger Rich Rogers and his helpers took us on a journey from soft and semi soft to hard and stinky. He asked us to smell the cheese, feel the cheese (literally, feel it with our fingers) and take in every moment. Each cheese was paired with a little nugget of whatever undertones was featured in the cheese to help it stand out. We sucked on a lemon after we ate the Chevre, we chewed on a toffee after a Gouda and ate bacon with the smelliest, most wonderful stilton on the planet. Our glasses were kept full by Rich's two lovely shop assistants as he told us how how each was cheese was made, where it was made and when and if it is ok to eat the moldy rind on the outer edges! Gross!

The evening was capped off with a final glass of California Pinot and Star Alyssa licking the final drops of honey off the slate with her finger. Alyssa and I plan to go back very soon. I am quite interested in their take on Beer and Cheese....cause I like Beer....like alot.
