Homemade hummus topped cucumber!
Ingredients:
- 1 can of chickpeas (Save the liquid)
- 3 tablespoons fresh lemon juice
- 1 1/2 tablespoons tahini
- 2 cloves garlic, crushed
- 1/2 teaspoon salt
- 2 tablespoons olive oil
- 2 Cucumbers peeled and sliced
- Black sesame seeds (which sort of looked like ants but added a nice texture)
- In a food processor, combine the mashed garlic, garbanzo beans, tahini, lemon juice, 1/4 cup of chickpea juice and olive oil.
- Process until smooth. Add a little more chickpea juice to loosen if necessary and add some ground sea salt to taste
- Pour hummus into plastic sandwich baggie. Cut off one corner and pipe hummus onto the cucumber circles.
- Top with black sesame seeds
